Loaded Greek Shrimp Salad

Serves: 1

Ingredients:

  • For the salad:
  • ½ cup shrimp
  • 3 cups chopped romaine lettuce
  • 1 cup diced cucumber
  • ¼ cup grape tomatoes
  • ½ cup diced green bell pepper
  • 2 tbsp feta cheese
  • salt & pepper to taste
  • ¼ tsp dried marjoram
  • ¼ tsp dried basil
  • ½ tsp dried oregano
  • For the dressing:
  • 1 tbsp balsamic vinegar
  • ½ tbsp extra virgin olive oil
  • ½ tsp dried marjoram
  • ¼ tsp dried basil
  • ½ tsp dried oregano
  • salt & pepper to taste

    Preparation Instructions:

    1. In a small bowl, whisk together the ingredients for the dressing and set aside.
    2. Heat a grill pan over medium heat with cooking spray. Combine the salt & pepper and spices in a bowl and toss the shrimp in the bowl to coat. Place the shrimp on the grill pan. Cook 2-3 minutes on each side until opaque. Pro tip: remove shrimp 30 minutes from refrigerator prior to cooking.
    3. Remove shrimp from the grill and set aside to rest while you assemble the salad.
    4. Assemble the salad by adding all the vegetable ingredients first to a bowl. Next top with shrimp, feta and drizzle with dressing.
