Shrimp Scampi with Carrot Noodles

This Whole30 Shrimp Scampi is a quick, 10-minute meal filled with flavor and nourishment! Prep the noodles ahead of time for and throw together meal.


Prep Time: 15 minutes

Cook Time: 10 minutes

Yield: 2 servings



  • 2 packages shrimp, thawed
  • 1 tbsp. avocado olive oil
  • 2 cups broccoli florets
  • 2 large carrots, spiralized
  • 1 tbsp. lemon juice
  • 2 garlic cloves, minced
  • 1/3 cup chicken bone broth
  • 3 tbsp. ghee
  • ½ tsp red pepper flakes
  • 2 green onions, sliced
  • salt and pepper to taste


How to Make It

  1. In a large skillet, add the ghee and bring to medium heat to melt.
  2. Add the garlic, broccoli and bone broth to the skillet. Simmer until the broth reduces in half about 3-4 minutes.
  3. Add the shrimp and sprinkle with salt and pepper and cook until opaque.
  4. Transfer the contents of the skillets to a bowl.
  5. Add the avocado oil and carrot noodles. Toss to combine.
  6. Cook 5 minutes or until desired tenderness (al dente is what recommended).
  7. Transfer the carrot noodles to the bowl with the sliced green onions. Toss to combine and serve!
