Slow Cooker Balsamic Salmon and Sweet Potatoes

Balsamic salmon made over sweet potatoes in a slow cooker yields the most tender salmon and perfectly cooked salmon. A simple way to make a full meal!

Prep Time: 15 minutes

Cook Time: 90 minutes

Yield: 2 servings

Ingredients

  • 2 salmon filets, thawed
  • 2 sweet potatoes, peeled and cubed
  • ½ red onion, sliced into large rounds
  • 2 tbsp. balsamic vinegar
  • ½ tsp. thyme
  • ¼ tsp. ginger
  • ¼ tsp. coriander
  • salt and pepper to taste

How to Make It

  1. Add a ½ cup of water to a slow cooker with the balsamic vinegar. Stir together then place the cubed sweet potatoes over it.
  2. Cover and cook 1 hour.
