Easy Fish Dinner

This summer I have been really digging all these simple, light, and EASY fish meals. Wether we broil in the oven or fire up the grill, dinner is a snap, and we can get back to enjoying these longer summer days. Having lots of frozen fish options on hand is key to staying on track with your health and fitness goals. If you are anything like me, the summer weekends can include lots of family and friends, as well as travel. Weekends like these can really throw you off of your healthy eating habits. So make those weeknight meals a no brainer and healthy to boot! 

 

Spiced Salmon with Mustard Sauce

Ingredients:

  • 2 teaspoons whole-grain mustard
  • 1 teaspoon honey
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground red pepper
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 4 (6-ounce) salmon fillets
  • Cooking spray

Preparation Instructions:

Preheat broiler.

Combine first 6 ingredients in a small bowl, stirring well with a fork. Rub mustard mixture evenly over each fillet. Place fillets, skin side down, on a jelly-roll pan coated with cooking spray. Broil 8 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.

Pair some sautéed greens, like kale, spinach, or collard, with lemon juice and salt and pepper with this fish, enjoy!
