Our scallops are harvested in the Great South Channel off the coast of Nantucket. They cook up plump, sweet, and delicious - a naturally healthy treat!

Dry Pack Scallops Have No Water or Chemicals Added

Our sea scallops are dry pack scallops, meaning they are shucked and then frozen "unprocessed" (not soaked in a water and preservative solution before freezing). This ensures you get only pure, natural, wild scallops. These are large U15 (less than 15 per lb), packed 4 scallops per package.

Sea Scallops are Super Healthy

Wild sea scallops are a low-calorie source of protein. Sea scallops provide a surprisingly high amount of omega-3s, as well as important vitamins & minerals like vitamin B12 (which can help prevent anemia, depression, fatigue, and memory problems, selenium (which acts as an antioxidant), and zinc(which helps to maintain a healthy immune system and heal wounds). Think of these scallops as a healthy indulgence.

Shipping for Frozen Items

Shipping is free on orders over $100. We will ship your package via UPS/FedEx Ground*, unless your location is west coast in which case we will automatically ship Express for a 2 to 3 day Transit. Your package will take 1 to 3 days to arrive to you once it is shipped. We do not ship across weekends because shipping time extends past the effectiveness of dry ice. 
  • Orders placed on Monday will ship same day if placed before 8:00 AM ET.
  • Orders placed on Tuesday thru Wednesday will ship same day if placed before 12pm ET.
  • Orders placed after 12pm ET Tuesday will be shipped the following day.
  • Orders placed on Wednesday after 12pm thru Sunday will ship Monday, with the following exception:
  • Orders placed on Wednesday thru Thursday before 12pm within (NC, SC & VA only) will ship same day, since delivery takes one day.
We are unable to ship to PO boxes or FPO or APO addresses. Currently we are able to ship only to continental US addresses.

    You may request or schedule a delivery date in the future and we will do our best to accommodate the requested date. However, please note that certain dates may be impossible to accommodate depending on your area, day of the week, weather, and carrier delivery schedule. E.g: Orders requested for Monday delivery could be delivered the Friday before or on a later day of the requested week.

    To prevent damage during transit, tinned items will always ship separately from frozen items. Tinned items will ship with FedEx Ground economy and may take up to 7 business days for delivery.

    Storage

    Seafood ordered from Sizzlefish should be kept frozen until ready for preparation. Items can be stored frozen for up to 12 months, but are best if consumed within 6 months of purchase.

    Thawing Instructions:

    The best way to thaw our seafood is to remove the product from the original packaging, place it in a plastic bag, and allow it to thaw in the refrigerator for about 6 hours. If you require faster thawing, we recommend placing the product into a non-vacuum sealed bag and placing it in cool water for around thirty minutes to an hour.

    Cooking Instructions:

    Pan Seared Scallops

    Pat dry sea scallops. We cannot emphasize enough how important this step is in achieving the beautiful caramelization we all strive for. Using a nonstick pan, turn the heat to medium high. Once hot, add avocado oil(higher smoke point than olive oil) and wait until it begins to glisten. Lightly sea salt and pepper your scallops and add into hot pan. Sear for 3-4 minutes and do not move the scallop while cooking(this will interfere with the caramelization process). Flip the scallops and add 1 tbsp of butter while they cook an additional 2-3 minutes.

    Many scallops sold in grocery stores are “wet-packed,” meaning they are soaked in a tripolyphosphate solution that causes them to absorb water. This can dilute flavor and make them difficult to sear properly.

    When you order Sea Scallops from Sizzlefish, you are getting true dry scallops, meaning they contain absolutely no added water or chemicals.

    Scallops are typically sized by how many scallops it takes to make up 1 lb. Our scallops are U15, which means there are fewer than 15 scallops per pound. This is considered a large, premium scallop size, ideal for pan-searing or grilling!

    Scallops are best when prepared simply to highlight their natural sweet flavor. Pan Searing is probably the most traditional way of preparing scallops. 

    To Sear Scallops: 

    1. Pat the scallops dry with a paper towel (Water is the enemy of a good sear, so this step is SUPER important)
    2. Heat oil or butter in a skillet over medium-high heat.
    3. Season lightly with salt and pepper.
    4. Sear for about 2 minutes per side until they ‘caramelize’ a golden brown color on the surface.

    Sometimes, in an effort to increase the weight or make the scallops appear larger, scallops are soaked in a sodium tripolyphosphate solution. This process causes scallops to retain more water, artificially inflating the weight (sometimes as much as 30%) and making the scallop appear more plump. Scallops treated with this method are referred to in the seafood industry as “wet” or “processed” scallops.

    When you hear someone refer to a scallop as a dry-pack scallop (or “dry scallop”) it does not mean that there is no moisture in the scallop. It simply indicates that the scallop has not been treated with phosphates or similar soaking solutions. 

    Dry-pack scallops are more desirable as they make for a much better sear (remember, moisture is the enemy of a great sear). Plus, dry pack scallops mean you’re only paying for the delicious scallop meat, not added water. But most importantly, because there are no added chemicals or added water to dilute the flavor of the scallop, dry pack scallops just taste better.
