Most of the ahi tuna consumed in the United States is treated with carbon monoxide or filtered smoke to preserve the red color of fresh tuna; the issue with this practice is that it can mask lesser-quality tuna. Our sashimi-grade tuna is never treated with CO or smoke. Instead, it is super-frozen to ensure that the quality of the tuna is completely preserved, rather than just the color.
Line-caught Pacific bigeye tuna (Ahi) represent a sustainable, healthy, and delicious choice. Once landed on the boat, the tuna is immediately frozen so that its eating characteristics are instantly preserved (handling known as “chijimi”). The boat captain must certify that the catch is dolphin-safe. It is packaged in Japan and shipped superfrozen to the US.
Upon thawing your tuna, you'll immediately be able to tell the difference in quality. Your tuna will take on a natural red color, different from the artificial bright red coloration found in carbon monoxide treated tuna.
