20 Minute Cranberry Orange Coho Salmon

Serves: 2


  • 2 pieces coho salmon
  • 1 cup frozen cranberries, thawed
  • 1/4 cup orange jam
  • 1 tbs orange zest
  • salt & pepper, taste


  1. Preheat oven to 375 degrees
  2. Line baking sheet with foil
  3. Place salmon fillets on baking sheet
  4. Season with salt, pepper or seasonings of choice
  5. Bake for ~18 minutes
  6. While salmon is baking combine cranberries and orange jam
  7. Heat in microwave for 1 minute
  8. Mix in orange zest
  9. When salmon is done, top each salmon fillet with half of the jam
  10. Serve over riced cauliflower, brown rice or with oven roasted potatoes
