One package contains a dozen Hotel size, softshell blue crabs, packed individually into 3 trays of 4 crabs each. We source our crab from the waters of the Chesapeake Bay's Eastern Shore, where the art of selecting shedding crabs for the perfect softshell has been practiced for generations.
Soft shells are crabs that have moulted (shed their hard shell) within the last 12 hours. During that time the shells are very soft, so that softshell crabs can be eaten whole, claw to claw (with the exception of the gills and parts of the abdomen which are removed before freezing). Our Sizzlefish softshell crabs are prepared, frozen, individually wrapped when they arrive to you, so that you can cook them within minutes!
