Balsamic salmon made over sweet potatoes in a slow cooker yields the most tender salmon and perfectly cooked salmon. A simple way to make a full meal! Prep Time: 15 minutes Cook Time: 90 minutes Yield: 2 servings Ingredients 2 salmon filets, thawed 2 sweet potatoes, peeled and cubed ½ red onion, sliced into large rounds 2 tbsp. balsamic vinegar ½ tsp. thyme ¼ tsp. ginger ¼ tsp. coriander salt and pepper to taste How to Make It Add a ½ cup of water to a slow cooker with the balsamic vinegar. Stir together then place the cubed sweet potatoes over it. Cover and cook 1 hour. Stir the potatoes and place the salmon filet on top. Combine the thyme, ginger, coriander, salt and pepper in a small bowl together. Sprinkle the seasonings over both salmon filets. Add the sliced red onion on top, cover and slow cook 25 minutes or until salmon is fork tender. Remove from the slow cooker and serve.
