Smoked Salmon & Lentil Breakfast Salad

This simple, no-cook meal is packed full of protein, high-fiber lentils, smoked salmon and fresh vegetables. It comes together in less than 5 minutes. Gluten Free

Smoked Salmon Salad


  • 1 package steam fresh lentils
  • 2-3 cups baby spinach
  • 1/4 small onion, sliced
  • 2 small tomatoes, sliced or chopped
  • 4 oz smoked salmon
  • capers, if desired
  • 1 tbs dijon mustard
  • 2 tbsp avocado oil
  • 2 tbsp white balsamic (can sub regular)
  • 1 tbsp lemon juice
  • salt & pepper, if desired
