Smoked Salmon Pizza

Smoked Salmon Pizza is an easy appetizer. Almond flour pizza topped with Greek yogurt, capers, red onions, and dill make for a fast, healthy and protein-rich holiday appetizer.

Yield: 4 servings

 

Ingredients

  • ½ package smoked salmon, sliced
  • ½ cup plain Greek yogurt
  • ¼ cup capers
  • ½ red onion, sliced
  • 2 tbsp. dill

For the pizza:

  • 8 egg whites
  • ½ cup almond flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp pepper

How to Make It

  1. In a large mixing bowl, whisk together the eggs whites then stir in the almond flour, baking powder, salt and pepper.
  2. Heat a skillet to low-medium heat and grease lightly with cooking spray or coconut oil.
  3. Once the pan is hot, pour the batter into the pan into an even layer. Cover the pan with a lid for 3-4 minutes. Peak at the top and if the bubbles appear, flip the pizza and cook another 2 minutes. Watch the pizza carefully to ensure it does not burn.
  4. Turn off the heat and transfer to a wire baking rack to cool.
  5. Once cool, pour the Greek yogurt over the top of the pizza. Sprinkle the salmon, dill, capers and red onion over the top.
  6. Slice and enjoy!
