Sablefish (also known regionally as Black Cod) is a mild, white flaky delicacy that is packed with the same levels of omega-3s as salmon. Its velvety texture, perfect white flakiness, and sweet flavor make it a rich meal experience, as well as a healthy, sustainable fish choice. Ours is native to the deep, frigid waters of the Northern Pacific. If you are trying sablefish for the first time, it is likely to become your new favorite fish!

  • Sablefish is a cold-water fish high in the omega-3 fatty acids EPA and DHA, which have a number of proven heart, brain, respiratory and other health benefits.
  • Sablefish is rich in nutrients like Vitamin B12.
  • Sablefish is low in mercury. 

 (Note: Sablefish may contain a row of flat pin bones that are difficult to remove during preparation, but easy to remove once the fish is cooked.)

Shipping for Frozen Items

Shipping is free on orders over $100. We will ship your package via UPS/FedEx Ground*, unless your location is west coast in which case we will automatically ship Express for a 2 to 3 day Transit. Your package will take 1 to 3 days to arrive to you once it is shipped. We do not ship across weekends because shipping time extends past the effectiveness of dry ice. 
  • Orders placed on Monday will ship same day if placed before 8:00 AM ET.
  • Orders placed on Tuesday thru Wednesday will ship same day if placed before 12pm ET.
  • Orders placed after 12pm ET Tuesday will be shipped the following day.
  • Orders placed on Wednesday after 12pm thru Sunday will ship Monday, with the following exception:
  • Orders placed on Wednesday thru Thursday before 12pm within (NC, SC & VA only) will ship same day, since delivery takes one day.
We are unable to ship to PO boxes or FPO or APO addresses. Currently we are able to ship only to continental US addresses.

    You may request or schedule a delivery date in the future and we will do our best to accommodate the requested date. However, please note that certain dates may be impossible to accommodate depending on your area, day of the week, weather, and carrier delivery schedule. E.g: Orders requested for Monday delivery could be delivered the Friday before or on a later day of the requested week.

    To prevent damage during transit, tinned items will always ship separately from frozen items. Tinned items will ship with FedEx Ground economy and may take up to 7 business days for delivery.

    Storage

    Seafood ordered from Sizzlefish should be kept frozen until ready for preparation. Items can be stored frozen for up to 12 months, but are best if consumed within 6 months of purchase.

    Thawing Instructions:

    The best way to thaw our seafood is to remove the product from the original packaging, place it in a plastic bag, and allow it to thaw in the refrigerator for about 6 hours. If you require faster thawing, we recommend placing the product into a non-vacuum sealed bag and placing it in cool water for around thirty minutes to an hour.

    Sablefish, commonly known as black cod, is a deep-water fish native to the cold waters of the North Pacific Ocean. Despite its common name, it is not actually a cod, but it is highly prized for its exceptionally rich flavor, buttery texture, and high natural oil content.

    Sablefish is a favorite in Japanese cuisine and fine-dining restaurants (a famous example is Nobu’s miso black cod). Chefs value its silky, melt-in-your-mouth texture. Its natural oils help prevent the fish from drying out, making it very forgiving to cook with.

    Sablefish has velvety, silky texture and is renowned for its rich, buttery flavor with a delicate sweetness. Because of its melt-in-your-mouth texture and rich flavor, many people in Alaska colloquially refer to Sablefish/Black Cod as “butterfish”

    Sablefish’s flavor profile comes in large part due to its high (healthy) fat stores and natural oil content. This also makes it very forgiving when it comes to cooking it.

    Sablefish is extremely versatile and works with a variety of cooking methods. Its omega-3 fats help keep it tender, moist, and flavorful. Popular methods include:

    • Broiling: Quick and effective, broiling caramelizes the surface while keeping the interior buttery. Place fillets on a lightly oiled baking sheet, season as desired, and broil on high about 6–8 inches from the heat source for 8-10 minutes, or until the top is golden and the fish flakes easily.
    • Grilling: Adds a light smoky flavor that enhances its natural richness. Preheat the grill to medium-high and lightly oil the grates. Place fillets skin-side down and grill for about 4-5 minutes per side, resisting the urge to move them so you get clean grill marks.
    • Smoking:  A classic preparation that pairs perfectly with sablefish's high fat content, producing a silky, melt-in-your-mouth texture. Brine fillets for several hours, then pat dry and let them air-dry until a tacky pellicle forms on the surface. Smoke at a low temperature (around 175-200°F) for 2-4 hours using a mild wood like alder or cherry.
    • Pan-searing: Creates a crisp exterior with a moist, flaky interior. Heat oil in a skillet over medium-high heat until shimmering. Place fillets skin-side down, pressing gently to ensure even contact, and sear for 3-4 minutes until the skin is crisp. Flip and cook another 2-3 minutes until just cooked through.
    • Roasting or baking: Perfect for simple seasonings with herbs, citrus, or miso glaze. Preheat the oven to 400°F, place seasoned fillets on a lined baking sheet or in a baking dish, and roast for 12-15 minutes until the fish is opaque and flakes easily with a fork.
