Fish Dishes Made Easy
When you cook with really good fish, you want to keep the preparation simple. Here are some ideas for turning Sizzlefish portions into tasty, nutritious, performance-building meals. For sautéing or grilling, just use flavorful seasonings and cook 4-5 minutes per side. Or you can bake or broil using your favorite seasonings or recipe. We’ve even used a panini grill for demos! (Try this on med-high setting and cook in 8-10 minutes.) Most people tend to over-cook fish. You can test for doneness by cutting into the center of the fish; if it is no longer translucent at the center, then it is done. The one fish that can be cooked an extra 4 minutes is sablefish, since its texture is so moist and rich (and loaded with omega 3s). Pan-Seared Haddock for One with Roasted Vegetables
Add a small amount of olive oil to a skillet and heat to med-high. Place fish "flesh" side down (which becomes the presentation side) and cook for 4 minutes; turn over and cook on the skin side med-low for 4 minutes
Remove with a spatula (with a little practice you can remove the fish from the skin, and then remove the skin separately from the pan to discard). Serve with a salad or favorite green vegetable 
Place fish indirectly over coals on the grill, cover and cook approximately 10 minutes per inch (Stove-top alternative: pan-sear catfish & spices approximately 5 min/side until meat is white & flaky)
Combine catfish, kale, salsa & avocado 
Heat pan with a tablespoon of olive oil. Sear fish in pan, then add almond slivers; cook until almond slivers are browned Goes great with steamed asparagus 
Place indirectly from coals on grill ; cover. Cook until done (10-12 minutes)
