Back to School Italian Style Fish Tacos

Back to School! I know, I know it is such a bitter sound to the kids’ ears. And it may be to you too Moms - mostly because now you’re running around like crazy preparing for the impending school year. However, we are HERE for YOU! How does wholesome, delicious, EASY to prepare fish delivered directly to your door sound? But first, why?

Well, we do know that low Omega3 levels have been found in kids with ADHD, and kids with other related behavior/learning disabilities. We also know that these kids do benefit from Omega3 supplementation. A recent study that took place in the UK showed that the general population of kids who ate Omega3 fatty acid foods, at least 3 times a week, had better brain and cognitive functions than kids who ate less or no fish at all!

  

I know what you're thinking, too bad, because your kids will turn their cute little noses up at the sight and smell of fish. 

Well, here is a recipe to make your life easier - a KID FRIENDLY fish taco recipe that you can whip up in a flash ::

Italian Style Fish Tacos  

 

Ingredients

  • 2 firm fish fillets (haddock, cod or sablefish),
  • 1 tomato, cut into very thin strips
  • ½  small red onion, cut into thin wedges
  • 1 medium zucchini or yellow squash, sliced (optional)
  • Ricotta cheese
  • Fresh garlic and basil
  • 1/4 cup natural gluten free Italian Dressing
  • Spinach or Tomato Basil wraps/tortillas (I used a gluten free brand)
  • Black pepper and sea salt to taste
  • Olive oil

 

  1. Marinade your fish in the dressing for 10 minutes. Then Grill or Broil for 12 -15 minutes. Make sure not to overcook.
  2. Chop your ingredients and add to a skillet with garlic, black pepper, and sea salt if desired.
  3. Sautee with a little olive oil until almost cooked, and then add in your fish. Stir it all together until everything is cooked.
  4. Scoop into tortilla wraps and top with ricotta cheese and red pepper flakes.
