Mango Tango Fish!

What’s your favorite fruit to use during the summer months? One of our favorites to eat and cook with is mango. Mango is so versatile and because it has a delicate and smooth flesh, it’s also easy to add to a dish!

Now, a lot of people will play it safe and add mango to salads or top their protein with a fruit relish. But what about really MAKING THE MEAL with a MANGO sauce? This is where it gets fun!

White fish, such as cod or halibut, are great to use as the main protein source for fruity and spicy sauces. They both are light in texture and compliment more complex flavors.

Are you ready to cook with Mango? Let’s dish it up!

Ingredients:

  • 1 cup pureed mango
  • 1/4 cup pineapple juice
  • Splash of lime juice
  • 1 jalapeno or Thai chili pepper
  • Black pepper (to taste)
  • Sea Salt (to taste)
  • 1 tsp of ginger
  • 1 tsp crushed garlic
  • Optional- coconut sugar or honey (to taste) 

Preparation Instructions:

Blend everything in blender and then simmer on medium to medium low for about 15 minutes or until sauce thickens. Add to grilled fish and top with avocado if desired.
