Cajun Salmon & Brussels Sprouts Frittata
Serves: 1
Ingredients
- 2 large eggs
- 2oz cooked SizzleFish Coho Salmon, flaked
- 1/4 cup shaved Brussels sprouts
- splash milk
- 1tsp Cajun seasoning (add more or less as desired)
- Salt & Pepper, to taste
Directions
- Preheat oven to 425 degrees
- Spray 4in ramekin with non stick spray
- Whisk together egg, milk and seasoning
- Mix in salmon and Brussels sprouts
- Pour into pan
- Bake for ~ 15-20 minutes or until set
- Serve with fresh fruit or a garden salad
