Easy Grilled Salmon Pasta Salad

Pasta salads are a quick dish to whip up & they’re perfect for potlucks and picnics. Add in grilled salmon for an easy summer meal.

Ingredients:

8 ounces pasta

8 ounces mozzarella balls

8 ounces cherry tomatoes

5 ounces olives

5 ounces artichokes

1 cucumber, chopped

1 tbsp extra-virgin olive oil

Salmon:

1 ½ - 2 lbs  sockeye salmon

1 tsp extra-virgin olive oil

1 tsp chili powder

1 tsp cumin

1 tsp garlic powder

1 tsp paprika

1 tsp pepper

1 tsp salt

Vinaigrette Ingredients:

½ cup extra-virgin olive oil

¼ cup red-wine vinegar

½ tsp oregano

½ salt

½ pepper

¼ garlic powder

 Method:

  1. Cook pasta according to package. Strain and run cold water over the pasta.
  2. Mix together salmon spices in a small bowl.
  3. Rub 1 tsp evoo all over salmon pieces.
  4. Rub spice mix onto salmon.
  5. Add 1 tbsp evoo to a large skillet over medium heat.
  6. Add salmon and pan-grill a few minutes each side or until salmon is done to your liking. Cool.
  7. In a small bowl, mix together vinaigrette ingredients.
  8. Pour a couple of tablespoons (or as much as you like) into the pasta salad and toss gently until all ingredients are wet.
  9. Add cooked salmon on top.
