Salmon steps in for shrimp in this reimagined take on scampi. We kept the recipe true to its classic ingredients with white wine, garlic and plenty of butter. Here at Sizzlefish, our Atlantic salmon is raised in the remote waters off the Faroe Islands, located between Iceland, Norway and Scotland. This salmon variety is raised without the use of antibiotics. The flavor is mild and flaky, staying moist when cooked. Sizzlefish salmon portions arrive with the skin on because this is where the heart healthy omega-3 fatty acids are concentrated along the fat line next to the skin. Each portion of Sizzlefish salmon is available in 4 or 6 ounces, perfect for customizing to your needs.
All About The Sauce!
Cubed salmon is first seared in olive oil before preparing the sauce. Garlic is then sautéed in butter until fragrant. Next, white wine, lemon juice and lemon zest are added. The tangy flavors of wine and lemon juice brighten up the fish and complement the richness of the butter. When it comes to white wine, look for a crisp, dry wine with medium acidity. Pinot Grigio or Chardonnay are fantastic. Avoid sweet wines like Riesling or Moscato. If you don’t want to use wine, chicken stock is a great alternative.
Ingredients

2 portions Sizzlefish salmon, cubed
1 tbsp minced garlic
1 tbsp lemon zest
2 tbsp lemon juice
1/4 cup white wine
1/2 salt, divided
1/2 tsp chili flakes
2 tbsp chopped parsley
2 tbsp olive oil
3 tbsp salted butter
Directions
Blot salmon dry with paper towel and season with 1/4 teaspoon of salt.
Heat olive oil over medium-high heat in a skillet. Once oil is hot, sear salmon for 4 minutes, turning after 2 minutes. Set aside on a plate.
Add butter and garlic to skillet and cook for 1 minute. Reduce heat to low. Add wine, lemon juice, lemon zest, chili flakes and remaining salt to skillet. Return salmon to skillet and simmer for 2 minutes longer. Top with parsley.
Serve salmon scampi hot on its own or over rice, zucchini noodles or pasta with crusty bread.
Recipe Note
Our wild Alaskan king salmon can also be used in this recipe. King salmon contains the highest levels of omega-3 fatty acids out of all Alaskan salmon.
Serving Recommendations:
To turn the salmon scampi into a complete meal and utilize all the lip-smacking sauce, serve over pasta like spaghetti, linguine or fettuccine. For a lighter, low-calorie and low-carb option, serve over zucchini noodles. Rice or orzo would also be delicious.
