Smoked salmon avocado toast is the perfect nourishing breakfast to start the day off right. This easy yet elegant recipe is ready to enjoy in 10 minutes, for a quick breakfast that doesn’t sacrifice health.
Avocado toast has become a breakfast staple in recent years and for good reason. Avocados add creamy texture and satiating good-for-you fats. They’re also full of fiber that helps support healthy digestion and stabilize blood sugar to curb hunger. You can use your favorite type of toast, from pumpernickel to rye. For this recipe we used sourdough for its distinct flavor and chewy texture.
Smoked salmon has a delicious smoked flavor that leaves little need for lots of spices or ingredients. It brings ordinary avocado toast to the next level with signature smoked flavor and ample protein.

This recipe uses an entire 4-ounce package of smoked salmon with each piece of toast getting an ounce of salmon.

This avocado toast recipe is finished with antioxidant rich microgreens and toasted sesame seeds. Microgreens are full of antioxidants that help support the immune system and are known as a superfood because of their high concentration of vitamin and minerals. There are many different varieties of microgreens with varying amounts of benefits and unique nutrition profiles.
Ingredients
4 slices sourdough bread, toasted
- 4 oz. Smoked salmon
- 2 medium avocados
- 1/2 tsp salt
- 1/2 tsp cracked black pepper + extra for serving
- 1/2 cup micro greens
- 6 slices of thinly peeled cucumber
- 1 tsp toasted sesame seeds
Directions
Mash avocados in a small bowl until mostly smooth. Stir in salt and pepper.
Spread avocado on toasted bread and top each with an ounce of smoked salmon, 1-2 cucumber slices and micro greens.
Sprinkle with sesame seeds and extra black pepper. Enjoy right away.
