Apricot Sesame Shrimp & Chicken

Description

Apricot Sesame Shrimp and Chicken is a healthy gluten free take on a Chinese classic. By including shrimp you get more flavor and protein, while the apricot sesame sauce is both healthy and delicious. This shrimp recipe is great for lunch or dinner with the family.

Ingredients

  • 1/2 lb (or 2 packs) shrimp
  • 1/2 lb chicken breast, cut
  • 1/3 cup apricot preserves
  • 1 - 2 tsp liquid aminos (or soy sauce)
  • garlic & onion powder, to taste
  • 2 tsp sesame seeds
  • 1 cup steamed broccoli
  • brown rice or caulirice, to serve
  • water

Directions

  1. Add chicken to a non stick skillet and seasoned with garlic powder and onion powder
  2. Cook until golden on the outside and cooked through
  3. Add in drained and rinsed shrimp
  4. Mix in apricot preserves, liquid aminos and 2 tbs water
  5. Cook until sauce begins to thicken and shrimp/chicken are coated
  6. Toss with sesame seeds
  7. Serve over brown rice or caulirice with steam broccoli
