Lemon Garlic Butter Shrimp Scampi
Lemon garlic butter shrimp scampi is a dish that delivers bold and fresh flavor, remaining elegant while requiring minimal effort. Juicy, tender shrimp are sautéed in garlic butter sauce, and bright lemon juice is squeezed in before finishing with herbs for a simple but deeply satisfying meal. This creates a balance of richness and acidity to make every bite feel light yet indulgent.
This dish also comes together in about 20 minutes, perfect if you’re looking for restaurant-quality results without requiring complicated steps or hard-to-find ingredients. Easy for a busy weeknight when you want something fast, but impressive enough to serve for a date night or small gathering. It’s a reliable go-to recipe that proves simple cooking can still feel special.
Why This Recipe Works
This shrimp scampi recipe works well because it blends simple ingredients with the right technique to make a balanced and flavorful dish. When prepared correctly, shrimp remain tender and juicy since they naturally cook very quickly. Cooking over medium-high heat and removing them as soon as they turn pink and opaque helps avoid the common mistake of overcooking, which can result in a rubbery texture. Careful cook time is one of the key factors of success in this recipe.
The garlic and butter create a base full of richness and depth, while lemon juice brightens and adds an acidic contrast to keep the dish from becoming too heavy. It’s this balance that makes shrimp scampi so appealing because it’s rich without feeling overwhelming. Adding herbs at the end enhances the freshness and brings all the flavors together to create a well-rounded final dish.
Choosing High-Quality Shrimp
The shrimp you use for this recipe will have a direct impact on the overall taste and quality, so it’s worth choosing carefully. Look for shrimp that are firm, slightly opaque, and have a light ocean-like scent. If they’re mushy, dull, or have a “fishy” smell, it’s usually a sign that they’re past their prime and may not be the best choice for this dish.
Frozen shrimp can be a dependable option, especially if they’ve been frozen following harvest. This helps preserve their natural sweetness and maintain their firm texture. At Sizzlefish, Wild Gulf Shrimp come peeled, deveined, and pre-portioned to simplify the cooking process. Since they’re flash-frozen at peak quality, they retain their texture and taste, giving you consistent results every time. No matter what shrimp you choose to use, just make sure to completely thaw and dry them well before cooking so they sear properly and develop the best flavor.
Final Thoughts
This shrimp scampi with lemon garlic butter is a wonderful example of a recipe that uses basic ingredients and simple techniques to produce an exceptionally flavorful dish. This recipe will easily fit into both regular and more elaborate meals without much effort on your part.
Using juicy shrimp along with a garlicky butter sauce and tangy lemon will make for a meal that feels very comforting and light at the same time. The flexibility of the dish makes it easy to prepare in whatever way you desire or according to what you have available.
No matter whether you cook this meal by yourself, for your family, or for guests, you can be sure to get a reliably flavorful and satisfactory outcome every single time.
Ingredients
-
1 lb Sizzlefish Shrimp, thawed
-
1 TBSP Olive Oil
-
Salt, to taste
-
Pepper, to taste
-
2 TBSP Butter
-
4 Garlic Cloves, minced
-
½ cup Vegetable Broth or Dry White Wine
-
Red Pepper Flakes, to taste
-
1 Lemon, zested and juiced
-
8 oz Spaghetti or Linguini
-
2 Small Zucchini, spiralized (optional)
-
½ cup Freshly Chopped Parsley
Directions
Heat a large pot of water to a boil to cook the pasta. Cook the pasta until almost done, just before it's al dente. Drain pasta, reserving 1 cup of pasta water for the sauce.
Spiralize the zucchini and set aside while you start cooking the shrimp.
Heat a large skillet with oil on medium heat.
Salt and pepper the shrimp. Add the shrimp to the oil and cook 2 minutes or until the shrimp is cooked on the first side. Flip and cook for 1-2 minutes or until cooked through. The shrimp should be opaque. Remove the shrimp from the pan and put aside while you cook the sauce.
Add the butter to the hot pan and melt. When the butter is melted, add the garlic to the pan and cook for 1 minute.
Next, add the vegetable broth (or wine) and red pepper flakes to the butter garlic mixture. Cook, whisking well, for one minute or until reduced and thickened.
Once the sauce has thickened, add the pasta, zoodles, and lemon juice. Toss well.
Add the shrimp to the pasta and toss well. If the sauce is not coating everything well, add a little pasta water at a time until the sauce covers the pasta well.
Toss the pasta with fresh parsley and lemon zest. Serve immediately.
Recipe Note
