Healthy Fish Sandwiches

Healthy Fish Sandwiches with a serious kick! A light, easy, Paleo friendly baked cod recipe served with Sriracha Greek yogurt for a flavorful, low carb meal. Packed with omega-3’s & freezer friendly! Gluten Free + Low Calorie + Paleo 

Serves: 4

Ingredients

  • 4 cod loins, 4 oz. each
  • 1 large egg
  • cup almond flour
  • 1 tsp cayenne pepper
  • 1 tsp. paprika
  • ½ tsp dill
  • salt & pepper to taste

Instructions

  1. Preheat oven to 350 F. Prepare a baking sheet with parchment paper.
  2. Place cod loins on the baking sheet. Cook 30 minutes. Remove from the oven and cool 5 minutes.
  3. Keep the oven on at 350 F. Discard the old parchment paper and replace with a new one.
  4. Once the cod is cool, use a fork to shred the cod into flakes.
  5. In a large bowl, whisk together the egg, paprika, cayenne pepper, salt, pepper and dill. Then add cod and almond flour. Mix together well.
  6. Form 4 patties and place on the prepared baking sheet.
  7. Bake at 350 F for 20 minutes until golden brown.
  8. Remove from the oven and serve immediately or cool completely and store in the freezer.
