Halibut is simply the perfect fish for this recipe. With its tender flaky flesh and light mild flavor, that crispy parmesan crust really shines through on these moist halibut fillets. Here at Sizzlefish, our halibut is wild-caught in the pristine waters of Southeast Alaska, off Baranof Island. We size-select our fish to yield perfectly tender, flaky fillet servings. This light eating fish is an elegant treat and one of the highest-value seafood items. Alaska Halibut is also a naturally lean fish that cooks up white, flaky and loaded with protein.
In truth, in our humble opinion, you can never go wrong with a flavorful mixture of lemon juice and garlic on your seafood. However, adding in that salty savory punch of parmesan cheese that gets beautifully crisp and brown takes this dish to the next level. We love the simplicity of ingredients here, that keep this meal right at 30 minutes, but feel free to make this dish your own by adding your favorite fresh herbs to the mix if you choose to. A nice side of fluffy buttery golden mashed potatoes would absolutely compliment the flavors and textures of the parmesan crusted halibut and garlic roasted crisp tender asparagus. For our keto friends, you could add a side of buttery mashed cauliflower to keep those carbs down while adding in another easy delicious side dish. Ingredients

2 Sizzlefish Halibut Fillets
1 lb Fresh Asparagus, bottoms trimmed
2 TBSP Olive Oil, divided
¼ tsp Paprika
Salt, to taste
Pepper, to taste
3 Garlic Cloves, minced and divided
2 TBSP Fresh Lemon Juice
½ cup Grated Parmesan Cheese
Directions
Preheat the oven to 400 degrees F. Line a large sheet pan with parchment paper.
Place the asparagus on the parchment lined sheet pan. Drizzle the asparagus with 1 tablespoon olive oil. Salt and pepper evenly to taste. Toss well with half of the minced garlic.
Next divide the asparagus in half pushing it to either side of the sheet pan. Place the halibut fillets in the middle of the sheet pan.
Drizzle the remaining olive oil over the halibut, rubbing it in to evenly coat. Sprinkle the fillets with paprika, salt, pepper and garlic. Drizzle the entire pan with the lemon juice. Evenly coat the halibut fillets with the grated parmesan cheese.
Place the sheet pan in the oven and bake for about 15 minutes or until the halibut fillets reach an internal temperature of 135°F.
