Spicy Halibut Broccoli Rice Bowl

Skillet baked halibut is paired with a spicy, hot sauce and served in a steamed broccoli bowl with fresh veggies. Sweet, sour, so many flavors packed in one bowl you are guaranteed to love!

Cook Time: 15 minutes

Yield: 2 servings

 

Ingredients

For The bowl:

  • 2 halibut fillets, thawed
  • 1 tbsp. extra virgin olive oil
  • 4 cups broccoli, riced
  • ½ cup carrots, shredded
  • 1 cup grape tomatoes, sliced in half
  • ½ tsp. red pepper flakes
  • salt and pepper to taste
  • green onions for garnish

For The Sauce:

  • ¼ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • 2 tsp. Tabasco
  • 1 t. spicy mustard
  • 2 tbsp. coconut sugar
  • ½ tsp. pepper
  • ½ tsp. salt

How to Make It:

  1. Preheat a skillet to medium heat, place the broccoli rice in the skillet with a ½ cup of water. Cover and bring to a simmer. Once the water has boiled down, removed the broccoli rice and transfer to a bowl.
  2. Add the extra virgin olive oil to the pan with the halibut. Sprinkle the halibut with salt, pepper and red pepper flakes. Cook 5 minutes then flip and cook another 5 minutes until flaky.
  3. While the halibut cooks, prepare the sauce by whisking the ingredients together in a bowl.
  4. Place the cooked halibut over the broccoli rice, add the shredded carrots and grape tomatoes to the bowl. Pour ½ the sauce over each bowl then add sliced green onions for garnish.
