Chili Pineapple Salsa Salmon

Homemade pineapple salsa tops pan seared chili rubbed salmon. A 15-minute meal that’s too good to be true!

Cook Time: 15 minutes

Yield: 2

 

Ingredients

  • 2 salmon filets, thawed
  • 1 tbsp. extra virgin olive oil
  • ½ cup pineapple, chopped
  • 1 cup roma tomato, diced
  • 1 jalapeno pepper, diced
  • ½ cup white onion, diced
  • ½ cup cilantro leaves
  • ½ cup edamame, omit for strict Paleo & WHOLE30
  • 2 tsp. chili powder
  • salt & pepper to taste

How to Make It

  1. Preheat a large skillet with extra virgin olive oil.
  2. Place the salmon filets on a place. Add a teaspoon of the chili powder to each filet with salt and pepper to taste. Using your fingers, rub the seasonings into the salmon filets.
  3. Place the salmon in the skillet, skin side down. Cook 5 minutes on medium heat.
  4. While the salmon cooks, add the chopped pineapple, tomato, pepper, white onion, cilantro and edamame to a bowl. Toss to combine. Set aside.
  5. Flip the salmon and cook another 5-7 minutes or until desired.
  6. Place the salmon with a ½ cup of the salsa mixture and enjoy!
