What Is Pesto And Why Use It In This Recipe
Pesto is a versatile condiment used often in Italian dishes on pasta, pizza and chicken or fish. A dollop of pesto brings recipes to life with very little effort. There are many varieties of pesto that utilize different nuts like walnuts or almonds and different herbs like parsley or even cilantro. We kept this pesto classic using fresh basil and toasted pine nuts. It’s full of heart healthy fats from olive oil and antioxidants from fresh basil and garlic.
What Is Pesto Butter?
The fresh pesto combines with softened butter to create what’s known as a compound butter. This marries the rich, nutty butter with the herby pesto. It is then chilled until firm before slicing. This pesto butter can be used in other recipes like melted into freshly cooked pasta, spread onto toasted crusty bread or even added to your morning eggs. Once the pesto butter is finished, salmon portions are baked until golden brown before being topped with a slice of pesto butter. The pesto butter will melt in a couple minutes adding a rich layer of herby, saucy goodness over salmon.

Here at Sizzlefish, our Atlantic salmon is raised in the remote waters off the Faroe Islands, located between Iceland, Norway and Scotland. This salmon species is raised without the use of antibiotics. The flavor is mild and flaky.
Ingredients
2 cups fresh Basil Leaves, packed
2 tsp minced Garlic
1/2 cup Olive Oil
1/4 cup lightly toasted Pine Nuts
1/4 cup grated Parmesan Cheese
1/4 tsp Salt
1 stick of Unsalted Butter, softened
1/4 cup Pesto

1 tbsp Olive Oil

Directions
Combine ingredients for pesto in a food processor and blend until mostly smooth.
Combine 1/4 cup of pesto with softened butter and use a fork to mix until well combined. Reserve remaining pesto for serving.
Spoon pesto butter on a large piece of plastic wrap and wrap into a log. Refrigerate 1-2 hours, until firm.
Preheat oven to 425ºF and line a baking sheet with parchment paper. Place salmon on baking sheet and blot flesh with paper towel. Brush with olive oil and season with salt and pepper. Roast for 12-14 minutes.
Slice pesto butter into round discs. Serve salmon hot topped with 1-2 slices of pesto butter on each salmon portion and serve with remaining pesto if desired.
Recipe Note
You can also use our wild Alaska king salmon in this recipe. This variety contains the richest levels of omega-3 fatty acids compared to other Alaskan species. Omega-3 fatty acids are important for protecting the heart, brain, blood vessels while reducing inflammation throughout the body.
For a complete meal, serve salmon with sautéed asparagus or broccolini, over brown rice or alongside a crisp salad.
