Easy Pan-Seared Rockfish (Tender, Mild & Flavorful Fillets)
Rockfish is an extraordinary choice for pan-searing, because it offers a rare combination of subtle flavor and pleasing texture. Unlike flimsier white fish, which can easily fall apart, rockfish holds its shape well in the pan, so you can get a beautifully browned surface without sacrificing moisture. Its flavor is clean and gently sweet, having depth that stands up well to high heat while remaining light enough to pair with bright, simple accents like citrus or fresh herbs. This recipe takes a minimalist approach to let the natural character of the fish shine. It uses just a few ingredients and a tight sense of timing to yield fillets that are both flaky and substantial, crisp at the edges, and rich but not heavy. It's a simple yet elevated seafood dish that feels intentional, balanced, and reliably delicious every time you make it.
