Mahi mahi, also known as dorado, offers a sweet succulent meat perfect for grilling, searing and baking. Its white, firm texture takes seasoning or marinating well, and because of this, the fillets will not fall apart while cooking. 3 Sizzlefish Mahi Mahi Fillets
2 TBSP Olive Oil, divided
Kosher Salt, to taste
Freshly Ground Black Pepper, to taste
¼ tsp Garlic Powder
¼ tsp Onion Powder
¼ tsp Paprika
¼ cup Red Onion, finely diced
1 Garlic Clove, finely chopped
¼ cup Chopped Fresh Parsley Leaves
¼ cup Chopped Fresh Chives
¼ cup Chopped Fresh Oregano Leaves
1 Lemon, zested and juiced
8-10 Truss Small Tomatoes
Directions
Preheat the oven to 375 degrees F.
Place 1 tablespoon olive oil in a 10 inch seasoned cast iron skillet. Swirl to evenly coat using more if the skillet is not well seasoned.
Place the mahi mahi fillets in the oiled skillet. Oil the fillets with the remaining oil. Salt and pepper to taste.
In a small bowl, combine the garlic powder, onion powder and paprika. Mix well. Evenly coat the mahi mahi fillets with the spice mixture.
Next sprinkle the red onion and garlic evenly over the fillets.
In a small bowl, combine the chopped fresh parsley, chives and oregano. Sprinkle the herb mixture over the mahi mahi fillets, reserving 2 tablespoons for garnish.
Next pour the lemon juice over the fillets and sprinkle the lemon zest onto the fillets.
Place the truss tomatoes around the dish.
Bake for 20 to 25 minutes or until the mahi mahi fillets reach an internal temperature of 137 degrees F.
When done, garnish with remaining fresh herbs.
