Shrimp Curry Butternut Squash Noodles

This shrimp curry butternut squash noodles recipe is quick to make lunch or dinner! With the perfect combination of flavors and textures, this meal is one you will want to make every day.

Yield: 2 servings

 

Ingredients

  • 2 shrimp packages thawed
  • 1 tbsp. coconut oil
  • 2 cups butternut squash noodles
  • 1 cup spinach
  • ½ cup coconut milk
  • 1 tbsp. almond butter
  • 2 tsp. curry powder
  • Salt and pepper to taste

How to Make It

  1. Add oil to a skillet and bring to medium heat.
  2. In a small bowl, whisk together the curry powder, almond butter and coconut milk. Set aside.
  3. Add the butternut squash noodles and spinach to the skillet and toss with oil.
  4. To the skillet, add the curry powder mixture and toss the noodles to coat.
  5. Turn the heat to high to bring to a boil. Boil 3-4 minutes or until the liquid is reduced.
  6. Reduce the heat to medium-low and add the shrimp.
  7. Sprinkle with salt and pepper. Cook 3-4 minutes until shrimp is opaque.
  8. Serve immediately!
